* Exported from MasterCook * Lime Cooler Bars Recipe By :Dorothy Anderson Serving Size : 30 Preparation Time :0:00 Categories : New Recipe Regular Sweet Amount Measure Ingredient -- Preparation Method -------- ------------ --------------------------------- 2 cups all purpose flour 1/2 cup confectioner's sugar 3/4 cup cold butter -- or margarine 4 eggs 2 cups sugar 1/2 cup all purpose flour 1/3 cup lime juice 1/2 teaspoon grated lime rind -- or more to taste 1/2 teaspoon baking powder confectioner's sugar 1. Preheat oven to 350° F. 2. In a bowl, combine the 2 cups flour and confectioner's sugar; cut in butter until mixture resembles coarse crumbs. Pat into a greased 13" x 9" baking pan. Bake for 20 minutes or until browned. 3. In a bowl, whisk the eggs, sugar, lime juice and peel until frothy. Combine the baking powder and remaining flour; whisk in the egg mixture. Pour over hot crust. Bake for 20-25 minutes or until light golden brown. Cool on wire rack. Dust with confectioner's sugar. Cut into squares.
