* Exported from MasterCook * Mama Field's Old Fashioned Rice Pudding Recipe By :Jeannette Field Serving Size : 0 Preparation Time :0:00 Categories : Regular Sweet Amount Measure Ingredient -- Preparation Method -------- ------------ --------------------------------- 3 cups cooked rice 1 cup milk 2 tablespoons butter (or margarine) 1/2 cup brown sugar 2 eggs a pinch of salt raisins (optional) 1/2 teaspoon vanilla (optional) 1 pinch nutmeg (optional) 1.- Heat the butter at a very low temperature, melting it before gradually introducing its companion, the brown sugar. (Leave the raisins where they are.) 2.- Meanwhile, back on the counter, the eggs should be beaten within an inch of their embryonic lives then, to add insult to injury, pour the milk on top of them and stir! (Don't touch those raisins, buddy, I mean it.) (My note: if using vanilla, dump it in now, along with the nutmeg if using) 3.- Hearts will warm (sigh) as the cold mix is gently and slowly combined with the warm (not hot!) mix and a pinch of salt is added for taste. (Did I *mention* raisins, yet? Then keep your grubby little fingers off them!) 4.- The rice is sprinkled over this lovely traditional church marriage of cold and warm, blending at the same time (if you are not ambidextrous - ask a passing stranger for assistance). if you like raisins, then now is the time to add them. (My note: keep on the stove until mixture thickens) 5.- Stick this lumpy concoction into the fridge and let it cool. Then serve to the astonishment of your grateful guests. (If you still have your raisins left, then... it's TOO LATE!! Throw the whole thing out and start again and *this* time pay closer attention!) Description: "My mother-in-law's rice pudding recipe.
