Preheat oven to 400 degrees. Spray a large baking sheet with non stick spray, or line with parchment paper. 2. Mix the sugar and cinnamon in a small bowl. Set aside. 3. Place phyllo sheets on a work surface (I use a jelly roll pan lined with a tea towel) and cover with a damp tea towel. 4. Remove the first sheet and lay it with short side toward you. 5. Spray with butter flavored spray. Sprinkle with about 2 tsp. sugar/cinnamon mix. 6. Fold the phyllo dough in half (should form a 12 x 8.5 inch rectangle). Spray again and sprinkle with 2 tsp, cinnamon sugar. 7. Fold in half again (6 X 4.25 " rectangle) and spray. Sprinkle with 1/2 tsp cinnamon sugar. 8. Cut into 8 short strips with a serrated knife. Place strips on baking sheet 1/2 " apart (or the melted sugar will stick them together) 9. Repeat twice more until you have 24 strips. Bake until crisp, about 8-10 minutes. Cool on wire racks.
