Chicken (Doritos) Enchiladas
(350o – Serves 6)





3 lbs chicken, cooked and boned

1 C Chicken Broth

1 can cream of chicken soup

1 can cream of mushroom soup

4 tsp minced onion

1  4 oz can diced green chiles

4 C Dorito (or other) Corn Chips

8 oz sharp cheese, grated

 

 

Combine and heat the soups with the onion, chiles and broth, mixing well.  Cover the bottom of a 9 x 13 baking dish with chips, layer chicken, half the sauce, and cheese on top.  Repeat, ending with cheese.  Bake 25 – 30 minutes.  May be made ahead and refrigerated or frozen.
