Yakitori Marinade and Sauce
Method
Ingredients

1/2 Cup soy sauce
1/3 Cup water
1/2 Cup sugar
1 Tb salt
1 Tb minced garlic
1 thumb of grated ginger
4 stalks of chives, minced
   sesame seed oil  (and seeds)
2 Tb  sake

Prepare garlic, ginger, chives
Measure everything in a glass bowl and stir to dissolve sugar and salt together. Add minced garlic, ginger, chives, and sesame oil.

Use this to marinate the chicken or beef before cooking.
Prepare marinade.  Soak cut up chicken or beef in it in the refrigerator the night before you plan to cook anything. Give yourself enough time to put the meat on skewers before you need them.
Make a second batch of marinade to heat and leave the cooked meat in to keep it warm before serving. BBQ by searing outside, then put in marinade to rest.
The container should be big enough to let the sticks be covered with the marinade. You can thicken the marinade with some corn starch to make a thicker sauce.
