Beef Broccoli and/or Tomato
Method
Ingredients
1 piece of flank steak or top round, preferably thick.
1 head of broccoli (cut up stem, too)
2 tomatoes (cut in eighths)
1 round onion (cut in slices)
Frying pan, oil (peanut, canola, olive)
salt and pepper
cutting board, sharp knife
3/4 cup of water, 1/2 tsp corn starch, dash of  soy sauce (mixed together - this is called a slurry) This will make gravy.
Prepare all vegetables, corn starch slurry.
Heat frying pan with oil until medium high. Salt and pepper both sides of meat and then sear meat on both sides for about 3 minutes. Take meat out and put on cutting board.
Turn heat to medium. Throw in onions, then broccoli.
Cut meat thin on a bias (should be still raw inside)
Turn up heat, add mixed corn starch slurry, add meat slices and stir everything together. Add tomatoes last. They don't need to be cooked very much.
This dish is a true stir fry.  The only part you need to be quick about is slicing the meat. If you aren't quick, just turn down the heat, cut up the meat at your own pace, then turn up the heat when you are ready to start cooking, and then start adding the vegetables (to get them partially cooked) and the corn starch slurry, then add the meat (and any juices). Stir everything together and serve immediately. This should be done just before you want to serve dinner. People should already be sitting in their seats.
