Baked Halibut
Ingredients:
1 gutted/cleaned whole 20-25 lb halibut
4 medium size spanish onions thinly sliced
3 medium size lemons sliced
1 lb butter in chunks
1 tablespoon garlic powder
Fresh pepper corns ground coarsely
Chicken broth
Aluminum foil in three layers to wrap prepared halibut
Instructions:
Clean halibut. Lightly salt and pepper the inside cavity.
Line inner cavity with layers of butter, lemon slices,
onion slices, and sprinkle with garlic powder. Make a shell with the three layers of tin foil long enough to
cover entire length and breadth of halibut. Before sealing pour some of the chicken broth
into the shell wetting the entire halibut. Seal well. Cook over
an open fire, on a grill/bar-b-que, or bake in the oven at 350 degrees
for 30-45 min.
important NOT to overcook the halibut. Just until flaky.
