Well, one I don't see on this list or your web page (unless it's under a different name as one of the ones without a rules description) is a fun one I saw at the Kansas State Rally last year, "Road Kill."
Equipment required is a hula hoop, a fishing net (kind with a hoop on the end of a pole), and as many stuffed animals, of various sizes, you can lay your hands on.
Place the bike at one end of the track (in this case, they just re-used the slow ride track), with the passenger holding the net. Lay the hula hoop on the ground at the far end. Scatter all the stuffed animals across the length of the track. Rider drives down the track (as slow or fast as desired), passenger scoops up as many animals as possible in the net, then dumps them in the hula hoop. One point per animal inside the hoop (only one pass on the bike), team with the most points wins.
