Veal Saltimbucco

 

 

1 lb veal

8 slices of proscuitto

8 slices of sliced mozzarella

1/4 cup of flour

1/4 cup of cooking sherry

1/4 cup of beef broth

1 tea garlic powder

3 tab butter

2 tab olive oil

Pinch of salt and pepper

 

Pound slices of veal between 2 pieces of saran wrap

Flour veal shaking off excess

Sauté veal in 2 tbsp oil and 2 tbsp butter

Remove from pan and place 1 piece of proscuitto, topped with mozzarella

Fold veal over and place in pan to be put in the oven at 350 degrees for 20 minutes

 

Meanwhile in the same pan scrape drippings and add the 1 tbsp of butter

Add beef both

Add cooking sherry and garlic

Boil down until the sauce gets thick

Add salt and pepper

 

When the veal is done place in dish and add the sauce

It is a wonderful dinner for a special occasion
