Uncle Landy’s Baccala  (Salted Cod Fish)

 

*1 to 2 lbs of dried baccala

1 28 oz can of tomato sauce

1 chopped onion

6 medium size potatoes

1 jar of Spanish pitted olives

4 tbsp. olive oil

 

Soak the fish in cold water for at least 24 hours.

Change water frequently.

Dry the fish with paper towels.

Cut up fish into approximately 3 inch pieces.

Sauté chopped onion in oil.

Add tomato sauce.

Cook for ˝ hour.

Add fish to tomato sauce.

Let cook until tender.

Add diced potatoes.

Add whole olives.

Continue to cook until the potatoes are tender.

 

*Dried cod fish can be bought at most fish markets
