Meat Tzimmes
Preheat
oven 350 degrees
2-3
lbs flanken or chuck steaks
¼
cup oil
Water
1
cup beef broth
2
large onions cubed
3
white potatoes cut in quarters
3
sweet potatoes cut into cubes
6
carrots cut into 1 inch pieces
3
stalks celery cut into 1 inch pieces
½
lb. prunes
¾
cup raisins (optional)
1tbsp
salt
½
tsp cinnamon
1/8
tsp ground ginger
¼
tsp pepper
In
a large heavy pot, heat oil and brown meat on all sides.
Add
water to cover meat.
Cook
on low heat for 1 hour and 15 minutes.
Preheat
oven 350 degrees.
Remove
meat and place in a large baking dish.
Place
all vegetables and fruit around the meat.
Add
beef stock and enough water to cover the meat and vegetables.
Mix
spices in a dish and sprinkle over the contents.
Place
in oven and cover lightly.
Cook
1 1/2 hours.
Uncover
and continue cooking until there is no more liqiud and the tzimmis is very
brown.
