Sausage and Cheese Casserole (Country)

 

 

Preheat oven 350 degrees

 

1 ¾ lb sweet Italian sausage

3 cups cubed Italian or French bread (stale)

4 large eggs

2 cups cubed Monterey Jack cheese

1 very small onion diced fine

1 box frozen peas (defrosted and drained)

1 can cream of mushroom soup

¼ freshly ground black pepper

¼ tsp ground sage

 

Bake sausage in oven until done (approximately 30 minutes)

Drain and slice into ½ inch rounds.

Whip eggs until very light and fluffy.

In a large bowl, mix all ingredients.

Pour into greased 9 x13 inch glass or ceramic baking pan.

Bake 1 1/4 hours.

 

My Auntie Ulah served this casserole on Sundays after church.

It is a very rich and filling dish.
