cups raw potatoes
3
cups boiled potatoes cooled
2
eggs beaten lightly
11/4
cups flour
1
tsp salt
¼
tsp pepper (preferably white)
Grate
raw potatoes and put into colander to drain.
Using
paper towel absorb as much liquid as possible.
Mash
boiled potatoes.
Add
eggs, salt and pepper and combine.
Spoon
out enough of the mixture to form 1 inch balls.
Roll
in flour.
Drop
into rapidly boiling salted water.
(Do
not crowd pot. Cook in several batches)
When
they rise to the surface, remove with slotted spoon and drain.
*Serve
in soup or as a side dish with crumpled fried bacon and fried onions on top.
