Cookies
12 oz almond paste
1/2 cup sugar
1 cup confectinary sugar
4 egg whites divided
Pinnoli nuts
Mix almond paste with:
1/2 cup of sugar
1 cup of confectionary sugar
2 egg white
Blend all in the processor
Roll dough into balls
Dip in remaining 2 egg whites
Flatten with thumb
Place on greased cookie sheet
Bake at 325 degrees for 15 minutes, let stand on
cookie sheet for additional minute
When cool, sprinkle with confectionary sugar
