Pasta with Spinach, Ricotta and Sun Dried Tomatoes

 

1 box of frozen spinach

1/2 cup of sun dried tomatoes

5 cloves of garlic

4 tab of olive oil

1 cup of water from the cooked pasta

15 oz of ricotta

1/4 cup of grating cheese (I use Locatelli)

 

Sauté garlic in olive oil

Add and sun dried tomatoes

Add spinach and sauté all together, when done place on the side

 

Cook pasta until al dente, drain, put back in the pot

Add ricotta

Add spinach mixture

Cup of water from the cooked pasta

Grating cheese

 

Mix all together with the pot on a low flame until all is thoroughly mixed

Enjoy!
