Luscious Pineapple/Cream Desert  (Southern)

 

Preheat oven 350 degrees

 

1 ¾ cups sugar

¾ cup butter

3 eggs

1 tsp vanilla

½ tsp cinnamon

1/2 cup heavy cream

2 tbsp sour cream

½ cup shredded coconut

½ cup chopped nuts

1 large can sliced pineapple

1 small can crushed pineapple

5 ½ cups stale white bread

 

Beat sugar and butter until light.

Add eggs separately and beat well after each addition.

Add and mix in vanilla, cinnamon, cream, sour cream, coconut and nuts.

Drain pineapple rings and cut into small pieces.

Add crushed pineapple with juice and stir all ingredients together.

Remove crusts from bread and cut into cubes and mix into the above.

Pour into a greased 9 x13 inch-baking pan.

Refrigerate 6 hours.

Bake 350 degrees 1 ½ - 1 ¾ hours.
