Lady Fingers
Preheat
oven 350 degrees.

eggs
1/4
tsp vanilla
¼
tsp almond or lemon extract
1/3
cup superfine sugar
½
cup cake flour
¼
tsp salt
1
tsp baking powder
Separate
eggs.
Place
yolks and extracts into bowl and beat on high until thick.
Beat
egg whites until stiff.
Add
sugar and continue beating until whites are glossy.
Mix
egg yolks into whites.
Sift
cake flour, salt and baking powder two times.
Fold
into egg mixture being careful not to deflate.
Spoon
into a pastry bag.
Pipe
onto ungreased baking sheet forming 3 inch by 1 inch lines.
Bake
until just slightly brown.
Remove
immediately with spatula and cool on rack.
