Kishka/Derma from Aunt Fanny
1 large onion
3 large carrots
1 clove garlic crushed
1 cups matzo meal
2 cups flour
1 cup matzo meal
2 eggs
1 cup nyfat, chicken fat or margarine
½ tsp paprika
¼ tsp seasoned salt
Aluminum foil
Into a large bowl grate onion and carrot.
Add lightly beaten eggs.
Combine the rest of the ingredients and mix well.
On a baking sheet, place a piece of foil about 22
inches long.
Oil well.
Form mixture into an 18 inch log and place in center
of foil.
Fold the long sides of the foil over the mixture and
seal.
Leave room for expansion. Do not wrap tightly!
Seal the ends as well.
Bake 50 minutes, turning on its side half way through.
Unwrap and slice into thick pieces.
*Serve as a side dish with beef roast or poultry.
