Italian Spinach Ricotta Pie
1 tablespoon butter
1 cup onions, minced
10 oz. package frozen chopped spinach
1 lb. Ricotta cheese
½ grated Parmesan cheese
2 eggs
½ teaspoon salt
½ teaspoon pepper
¼ teaspoon nutmeg
Drain spinach thoroughly until water is gone.
Melt butter and sauté onions.
Add spinach and stir until moisture is almost gone.
Remove from heat.
Mix the other ingredients together and add the spinach.
Blend together and pour into a pie plate or baking
dish.
Bake at 350 degrees for 40 minutes.
Remove from the oven and let it cool until the mixture
is firm.
