Hot Fruit with Matzo Streusel Topping
Preheat
oven 350 degrees
1
lb can peaches (drained)
1
lb can apricots (drained)
1
lb can cherries (drained)
1/4
cup apricot brandy
1/4
cup plain brandy
2
tbsp lemon juice
zest
of 1 lemon
1
1/4 cup brown sugar
½
tsp apple pie spice or cinnamon
dash
salt
Apple
juice
Pour
all ingredients into a lightly oiled 4 qt. baking dish.
Add
enough apple juice to nearly cover fruit.
Cover
lightly with aluminum foil.
Bake
30 minutes and uncover.
Topping:
½
cup matzo meal
½
cup brown sugar
¼
cup margarine
With
2 knives or a pastry blender cut margarine into matzo meal.
This
should form large crumbs.
Add
brown sugar, coating the crumbs.
Sprinkle
on top of baked fruit.
Sprinkle
matzo streusel mix on top of fruit
Bake
20-30 minutes more until top is brown.
We
love this dish at Passover, but it can be served all year round as a side with
the main course or as dessert.
