Honey Nut Cookies

 

 

Preheat oven 375 degrees

 

½ cup honey

¼ cup brown sugar

¼ cup sugar                                                                                                                                                 

2 eggs

¼ tsp vanilla

¼ tsp almond extract

3 cups flour

½ tsp salt

1 tsp

½ tsp cinnamon

¼ tsp cloves

½ tsp ginger

Zest of 1 orange

¾ cup chopped almonds

 

In a large mixing bowl, place honey and sugar and stir to combine

Add eggs and extracts and beat until light, about 3 minutes.

Mix in rest of ingredients and honey mixture.

Knead into a stiff dough.

Wrap in waxed paper and refrigerate 3 hours.

Roll dough between two sheets of waxed paper to ¼ inch thickness.

Using a floured cookie cutter, cut into diamonds or circles.

Grease cookie sheets and bake 8 minutes.

 

Optional:

When cool, brush on an icing made of 1 cup confectioner’s sugar and 2 tbsp water.
