Eggs and Peas
This is a dish that I remember eating as a young
child. It was simple yet delicious and it is so easy to prepare.
1 small onion, chopped
1 28 oz. can crushed tomatoes
4 tablespoons oil
1 small pkg. frozen peas
4 eggs or as many as you like
salt and pepper to taste
Sauté onion in oil
Add tomatoes, salt, pepper
Add frozen peas, rinse in cold water first
Cook until peas are done
Break whole eggs into the hot mixture
Cover and simmer until eggs are set
