Eggplant Meatballs  (one of my favorites)

 

 

1 lb chopped meat

1 large eggplant

1 egg

1/2 cup breadcrumbs

1/2 cup grating cheese

Chopped parsley

Salt, pepper, garlic salt

Olive Oil

 

Peel eggplant and cut into small pieces

Boil eggplant then drain and squeeze all the water from it

Mix chopped meat, eggplant, egg, breadcrumbs, cheese, parsley and seasonings

Make meatballs and fry in oil

When done add to your tomato sauce and let cook the same way you would cook meatballs

Serve with pasta or by themselves
