Chopped Herring

 

2 pickled herring filets

2 1/2 tbsp. white vinegar

1 large Granny Smith apple

2 slices white bread

2 hard boiled eggs

1 small onion

Salt and pepper to taste

1 tsp. sugar optional

 

Cut herring into small pieces (remove skin and bones).

Soak bread in vinegar and then cut into pieces.

Chop herring and bread finely in a wooden or metal bowl.

Peel and core apple and cut into small pieces.

Dice onion finely and add to apples.

Chop eggs, salt and pepper and add to apple/onion mixture.

Combine all ingredients and chop until smooth, but not paste-like.

Add sugar slowly, to taste, if too tart.

Refrigerate.

 

(Grandma used to chop the mixture with a “hock messer” (chopping knife) in a shallow wooden bowl.  A food processor can be used effectively but I have never been able to match the consistency she created.  Not too smooth, not too chunky.  Just perfectly schmereable!)
