Caldo Verde (Portuguese
Potato Soup)

potatoes
½
lb fresh kale
½
lb collard greens
7
cups water
1
cup chicken stock
3
tbsp olive oil
6
oz Spanish sausage (chorizo)
Salt
and pepper to taste
Peel
potatoes and cut into chunks.
Place
in pot with lightly salted water and chicken stock..
Cook
until soft.
Mash
potatoes in cooking liqiud (do not drain).
Cut
stems from kale and collard greens and wash thoroughly.
Chop
into small pieces.
Add
to potatoes and season to taste with salt and pepper.
Cook
on low heat until greens are tender.
Add
sausage and simmer an additional 5 minutes.
You
may need to add a little more water if soup is too thick.
