Potato Rolls

1 package yeast
1/4 cup warm potato water
1 cup milk, scalded and cooled
1/2 cup mashed potatoes
1 teaspoon salt
4 1/2 cups flour
3/4 cup sugar
1/2 cup butter
1 egg
Soften yeast in water. Stir into cooled milk with
potatoes and salt. Add 2 cups flour. Beat until smooth. Cover. Let rise 1/2
hour. Cream butter and sugar and beat in egg. Add that to first mixture. Add
enough flour to make soft dough. Knead and cover in bowl. Let rise until
double (1 1/2 hours). Punch down, Shape into walnut sized buns 1/2 inch apart
on greased baking sheet. Cover. Let rise 1 hour. Bake about 20 minutes at 400
degrees.
