Soups! Even the word makes people smile! Whether it is Bean and Bacon, Chicken Noodle, New England clam chowder or its inferior cousin Manhattan, soups bring back a feeling of love, warmth, cold snowy days, and mom’s serving up big bowls of goodness. This semester we will start with basic soups and will progress to culinary masterpieces such as Mang Tay Nau Cua also known as Asparagus and Crab Meat Soup. This course will take you on a gastronomic tour of the world and its various cultures. Some recipes will become family favorites, and many of these will be served by you years down the road. Grab your knife, your cutting board and that big stock pot and let’s get cooking!
