Maggie's Fried Green Tomatoes

No one can cook like those great Mississippi cooks! This is a recipe from one of those Mississippians our friend Maggie Crabtree. It will melt in your mouth. If you have never eaten Fried Green tomatoes you have a wonderful treat in store for you.


  • Slice some green tomatoes thinly.
    In a large bowl, mix together the following ingredients to make an egg wash.
  • Add 1 teaspoon of oil

  • 1 egg

  • 1/4 cup water

    In a seperate bowl, mix together these two other ingredients:
  • 1 cup flour

  • 1 cup cornstarch

    Pour oil into a frying pan and heat pan until the oil is hot enough fry the tomatoes.
    Now take the sliced tomatoes and dip them one by one into the egg wash, then roll in the flour/cornstarch mixture being sure to coat each slice throughly. Drop a few slices into the hot oil and cook until the tomatoes turn golden brown. Drain on a paper towel and repeat procedure.
