PIZZA CRUST and SAUCE
I prefer making up two pizzas, with all the topping, sauce and everything then freeze one for later. Unless we have company we find we are not able to eat two of them at one sitting. Freezing doesn't hurt them as long as you cover them with plactic wrap and then aluminum foil. They will keep for months this way.
~~~~~~~~CRUST MIX~~~~~~~~~~
5 cups regular flour
1/4 teaspoon baking soda
1 Tablespoon sugar
1 teaspoon gralic sale
1/2 teaspoon oregano
3 Tablespoons Vegetable Shortening (such as Crisco)(
5 cups regular flour
Mix together all of the above ingredients.
This will and store up to six months if placed in a tight fitting plastic container. When ready to use follow directions below.
~~~~~~~~~~To MAKE A PIZZA CRUST~~~~~~~~~~
Soften the below yeast in the warm water and stir in the teaspoon of sugar. Let it stand until bubbly.
1 pkg. ( or 1 1/2 tsp) active dry yeast
1/2 cup warm water
1 teaspoon sugar
Now add all of the above CRUST MIX.
Kneading it until it is elastic (or stir about 25 strokes, vigorously).
Oil your hands and two pizza pans with some vegetable oil, to help keep it from sticking to you or the pan. Lightly sprinkle some corn meal on top of the oiled 15" pans (This helps to make the crust crispy. if you don't want it that way then leave the cornmeal off.)
Shape the dough into two balls. Place one ball on each tray. Press and shape to fit each pan.
Now is the time to ad your sauce (see below for one suggestion) and topping of your choice.
~~~~~~~~~~~~SAUCE FOR PIZZA~~~~~~~~~~~~~
1 8oz. can of tomato sauce
1/2 can warm water
3 Tablespoons oil
1 or 2 cloves of garlic, crushed or chopped finely
1 teaspoon dry oregano
1 teaspoonful dry basil
a little bit of salt
1/2 teaspoonful of pepper
1 large onion, chopped
Mix and cook all of the above ingredients together to make a nice sauce. After it has simmered about five minutes, giving it time for the flavors to blend. Mix in the following ingredients:
1/3 cup water mixed well with 1/4 cup flour
Stir immediately, making sure the flour/water mixture is well incorporated into the sauce. Put the sauce back on a low fire and continue stirring until sauce begins to thicken. Take sauce off the heat and if it is to thick, stir in a small amount of water to thin it down.
Spread Sauce on the top of the two Pizza crusts and add your favorite toppings such as meats, cheeses, vegetables or fruit.
Bake at 425 degrees for 20 to 25 minutes. (If you have made it and frozen it, it will take slightly longer.)
