ROBBIE'S FANTASTIC CAULIFLOWER CASSEROLE
Buy 1 head caulifower
Wash cauliflower and break into flowerets. Cook in a small amount of boiling salted water for 10 minutes or till tender.
Drain well; place caulifower in container or electric blender or food processor; process till smooth. and set aside.
Now melt in a heavy skillet over low heat
1/2 cup margerine
Add to the melted
margerine
1/4 cup plus 2 Tablespoons all purpose flour
Stirring until smooth. Cook for one minute, stirring constantly. Gradually add into this mixture:
1 1/2 cups milk
Cook over medium heat, stirring constantly. until the mixture is thickened and bubbly.
Beat the until thick 4 yolks of:
4 eggs, that have been seperated
They should be lemony colored. Gradually stir about on-forth of hot white sauce into the yolks; then add remaining white sauce, stirring constantly.
Three ounces of cream cheese
Should be added to the hot mixture and stirred in until melted. Now add in the cauliflower and
1/2 teaspoon salt, 1/4 teaspoon pepper
1/8 teaspoon ground thyme
1/cup Swiss and 1/2 cup American Cheese, grated
small jar of Pimentos
can of green beans
Stir well untill cheese melts into the other mixture.
Beat 4 egg whites until stiff, but not dry
(These egg white should be at room temperature). Gently fold in the egg white into the cauliflower mixture.
Bake at 350 degrees for 45 to 50 minutes or until golden brown. Serve immediately.
