~Coating Mixture~
1 cup of crushed CORNFLAKE type CEREAL
1/4 cup plus 2 Tablespoonsful of grated PARMESAN type CHEESE
2 teaspoonsful of dried PARSLEY FLAKES (or 4 Teaspoonsful of fresh parsley, chopped fine)
1 small clove of GARLIC, minced
1/4 to 1/2 teaspoon of SALT
a dash of PEPPER
Mix all of the together and set aside.
~Dipping Mixture~
1/4 cup melted MARGARINE, melted
4 beaten EGG WHITES
Mix together with a wisk, blending well.
Dip the chicken pieces one by one into the egg mixture; then roll in the crumb mixture, pressing it slightly. Make sure the pieces are throughly coated.
Arrange the chicken on a paper towel lined microwaveable platter. Cover with another paper towel and Microwave for 2 1/2 to 4 minutes on HIGH. (depending on the amount of wattage your Microwave has.)
Rearrange the chicken but DO NOT TURN it over. Microwave again for 2 1/2 to 4 minutes or until chicken is no longer is pink in the middle. (The juices should run clear or it is not cooked enough).
Serve on a bed of rice with a nice salad for a wonderful low calorie meal!
