For those who are unfamilier with Chow Chow, it taste better than relish but is on the same style or type of condiment

ROBBIE'S TEXAS STYLE CHOW CHOW

This can be chopped in a food processor, meat grinder or chopped up by hand. Just chop all the following ingredients as directed for each vegetable below.

~Ingredients~
  • 2 quarts of tomatoes, chopped coarsly

  • 2 quarts of Cabbage chopped up fine

  • 5 medium red and 6 medium green peppers

  • 1 quart Onion, chopped

    1 cup salt
  • 1 quart of water

    Chop and mix all of above ingredients together, stirring well. Let this mixture stand overnight in the refrigerator. The next morning drain and press the vegetables through a colinder to remove all possible liquid.

    In a large saucepan, (One large enough to hold the vegetable and fluid, although you do not put the veggies in just yet) add the following ingredients.

  • 1 1/2 quarts of vinegar

  • 1 quart water

  • 4 1/2 cups sugar

  • 1/2 cup Mustard Seeds

  • 1 Tablespoon mixed pickling spice

  • 1 ounce celery seed

    Mix the above well and boil for five minutes. Then add the vegetables abd bring back to a boil. Pour into sterilized hot jars and seal at once.let sit in bowl at least 6 hours to oven night. Drain off water in a colinder to remove all the liquid possible. Mix the rest together and boil for five minutes. Then add vegetables and bring back to a boil. Puour into sterilized jars and seal at once.
