Home Made Baking Mix
Makes 7 cups
Sift the following ingredients together four or five times.
6 cups of regular FLOUR
1/4 cup SUGAR
1 Tablespoonful of SALT
3 Tablespoonsful BAKING POWDER
Now add 1 cup white VEGETABLE SHORTENING.
Using your fingers, a knife or a pie mixer, cut the shortening into the flour mixture, making sure it is well cut in and the shortening looks like small grains.
This mixture will stay good stored on the shelf in a tight fitting jar or container for up to six months if you place a bay leaf in the bottom of the jar.
TO MAKE BISCUITS
Mix 2 1/2 cups mixture above, with 3/4 cups MILK and 2 Tablespoons BUTTER.
Mix well. Roll out on a floured board and cut with a biscuit cutter to the size you want.
Bake on a greased baking sheet and cook at 450' for about 15 minutes or till browned.
For Pancakes
Mix 2 cups mixture with 2 EGGS and about 1 1/2 cups MILK or more if you think it is to thin. Pour on a greased skillet or griddle and cook as for regular pancake mixes.
NOTE: Use the same ingredients as for Pancakes for making WAFFLES except add 4 Tablespoonsful melted MARGERINE and pour into waffle iron.
SWEET MUFFINS
Mix 2 cups mix, 2 EGG WHITES, 1/3 cup SUGAR and 2 Tablespoonsful of OIL.
Grease some muffin tins and pour batter into each cup 1/2 full. Bake at 400' for about 15 minutes or until a toothpick inserted into one of the muffins comes out clean and they are golden brown.
