| Lemon Cheese Squares Crust 1/4 cup brown sugar 1/3 cup butter, softened 1/2 tsp. ground nutmeg 1/4 tsp. ground cinnamon 1 cup all-purpose flour Filling 8-oz. cream cheese, softened 2/3 cup sugar 1/4 cup fresh lemon juice 1 Tbsp. lemon zest 1/2 tsp. vanilla 1/2 tsp. baking powder 1 egg Combine crust ingredients and mix until crumb mixture forms. Spray an 8-inch baking pan with cooking spray and press crust evenly into bottom of the pan. Bake for 15 minutes at 350 degrees. Meanwhile, combine filling ingredients and mix with a hand mixer or food processor until smooth. Pour over crust and spread out evenly. Bake at 350 for 20 - 25 minutes. Allow to cool and chill before cutting into squares and serving. |
