I started trying to can milk in a pressure cooker many years ago. The milk would separate are look like it has Tide Laundry soap grains in the milk.
We tried diced potatoes to no avail. I even tried a couple table spoons of rice. The rice was quiet tasty but the milk still had problems with separating.
While scratching my head in frustration I took a simple logical approach. The milk looks like milk when making cheese. To make cheese you need something to turn the milk. Vinegar will work and make the milk separate. So Vinegar is acid and I will need the opposite. What do we use to change an acid stomach? Growing up in the country we used baking soda to help over acid stomach.
At first we used 1/8 teaspoon of baking soda. It worked perfectly. Then started adjusting the volume of Soda. It only takes a small amount to soda to help the milk can great.
First thing we use gas burners so you will have to make your own settings with electric stove top. If the milk is sitting in the frig then we need to bring up the temp very slowly! When I set the milk on the fire it is on very low, because of preventing the jars from breaking. Leave it on very low for 20 to 30 minutes. When the top is quiet hot then you may turn the temp a little more. Set the gas to about � setting.
When the top is to hot to touch and hold your hand then turn the temp all the way up. I prefer to keep my close off valve on top of the warming lid. When steam starts seal off the steam however you canner works.
We let the pressure rise to 10 pounds. I always cut off the fire and let the canner cool until I can handle it with bare hands.
Clean and repeat. You do not have to can the milk before three days if you need to collect a canner full.
FYI: If some of the milk still wants to curdle and look stringy, look at your doe�s. This system will show you that a doe is starting to have mastitis before the California mastitis system will detect the problem.
When some milk looks bad I lable and can each doe milk separately. Then I know who is starting to have a problem. Treat how ever you treat the udder for udder problems.
If you forget the milk and it goes to long it looks like coffee and cream. The kids still love it and grow great.
If you dam raise your kids then you will have to adjust this system to suit the mama goat. Smile!
