Stuffed Cucumber
Material:
2 Large Cucumbers
200 G of Ground Pork
200 G of de-shelled shrimps
1 Tablespoon of dried shrimps
3 Black Mushrooms
1 Teaspoon of salt
½ Teaspoon of Sesame Oil
Method:
1. Peal the cucumbers, clean them, cut to 3 cm per log, empty center seeds
2. Put the dry shrimps and black mushrooms in water to soften them. Mince them to tiny pieces.
3. Chop shrimps, mix well with ground pork, black mushrooms, dry shrimp, some salt, sesame oil, and corn starch.
4. Marinate cucumber logs with little bit of salt, spread corn starch paste on the inside, stuff in #3 mixture, wrap with saran wrap, cook in high heat for 8 minutes, stir little bit of corn starch into the soup, and pour over the cooked stuffed cucumber.
