Chicken -n- Dumplins


This is a "to taste" recipe. You might be too full to eat it after you get through cooking it!





Chicken Broiler(cut up) or Chicken Parts
2 Chicken Bouillon cubes
salt and Pepper to taste
self rising flour
salt and pepper and cajun seasoning to taste






Cut up broiler chicken or use equivalent amount of chicken pieces
Cover chicken with water and add bouillon cubes and seasonings. Boil chicken until done.
When done - take chicken out and debone while broth cools.


With cooled broth: take about 3/4 to 1 cup of broth and pour into bowl. Sift flour in seperate bowl (biscuit bowl). Make round hole in the center of flour . Add broth to hole. Gradually add flour and kneed until it is biscuit dough stage. Roll out on floured flat surface REAL THIN. Cut into small pieces.( i cut vertically about into 1 1/2 inch sections then horizontially in about 2 to 2 1/2 inch section into rectangles).

Reheat broth to a boil. Have broth at a rolling boil and drop the dumplins in the broth one at a time until you have enough to serve your family. Add deboned chicken. Cook until dumplins are done. Be careful! After you finished dropping dumplins and they have boiled for a couple of minutes turn your burner down so you will not burn the bottom of dumplins and after dumplins taste done turn the burner off because if you cook them too long then they will become mush!




I have also discovered that you can make these dumplins ahead of time and freeze them!
I did this when I had a pot luck to go to and did not want to have reheated dumplins!
Just make the dumplins as directed and place them in a covered container lined with floured waxpaper. Lay the dumplins out in a single layer and cover it with floured wax paper and add another layer. Do this until container is full or you have enough. Do not lay the dumplins on top of one another without a layer of wax paper between them cause they will stick together and you will have a mess! When you are ready to drop, no need to thaw just drop frozen dumplins in as directed above! Enjoy!

These are the best dumplins in the world and may take some parctice to get it just right but they are well worth it. They are also great with Corn bread and a homemade sweet pickles. Black eyed peas are good with this too.
