Mashed Potatoes with Grilled Onions

    • 1/4 cup nonfat chicken broth
    • 4 sweet onions, sliced thin
    • 6 baking potatoes, peeled and cubed
    • 1/2 cup skim milk
    • 1/4 tsp pepper
    • 3/4 tsp Mrs. Dash seasoning



     
    1. Spray large nonstick skillet with cooking spray; add chicken broth and heat over medium-high heat.


    2. Add onions and cook, stirring frequently, until onions are golden borwn and soft.

    3. While onions are cooking, place potatoes in large saucepan. Pour in enough water to cover potatoes and bring to a boil over high heat. Reduce heat to low, cover and simmer 8 to 10 minutes until potatoes are tender. Drain well.

    4. Spray saucepan with cooking spray; return potatoes to pan and mash with a fork or potato masher.

    5. Add milk, pepper, and seasoning; mash until smooth and creamy.

    6. Remove 2 to 3 tablespoons onions from pan; add remaining onions to potato mixture and mix well.

    7. Cook over medium heat until heated through. Top with reserved onions and serve.
