Fruity Rice Pudding submitted by ansondale
- 1 cup of water
- 1 can (14 oz) no sugar added crushed pineapple
- 1 cup of Minute Rice, white
- 1 packet of low calerie sweetner
- 2 cups of Cool Whip Lite
1. MIX 1 cup water, 1 can (14 oz.) no sugar added crushed pineapple. Microwave for 5 min. on HIGH.
2. ADD 1 cup MINUTE White Rice and 1 packet low-calorie sweetener. Cover and let stand 30 min. Refrigerate 4 hr.
3. STIR in 2 cups COOL WHIP Lite Whipped Topping. Divide between 6 small bowls and garnish with toasted sliced almonds.
