Banana Bread

    • 1 1/4 cup all-purpose flour
    • 1 tsp baking soda
    • 1/2 tsp baking powder
    • 3/4 cup granulated sugar
    • 1 tsp cinnamon
    • 1 egg
    • 1 egg white
    • 1/4 cup no fat yogurt
    • 1/4 cup vegetable oil
    • 1 tsp vanilla
    • 1 cup mashed ripe bananas (2-3 medium)
    • 1/2 cup raisins

     

     1. In a bowl sift together flour, baking solda and baking powder. Set aside.

     2. In a large bowl (I like to use a blender) blend sugar, egg, egg white, yogurt, oil and vanilla. Blend in bananas. Add to dry ingredients; mix well until just combined. Pour batter into prepared pan (I use non fat cooking spray). Bake in preheated oven for 1 hour or until tester inserted in centre of loaf comes out clean.

Variations:
* 1/4 cup of apple sauce can be substituted for 1/4 cup of oil. This will change the calories to 112 per slice and .5 grams of fat per slice.
** add 1/2 cup of walnuts and increase calories by 28.5/slice and fat 2.76 g/slice
*** add 1/2 cup of chocolate chips and increase calories by 36.67/slice and fat 2 g/slice
