Dhokla (as demonstrated on Oct. 21 by Mrs. Patel)

· Mix together one teaspoon Salt,  2 1/2 teaspoons Sugar, 1 glass (10 oz.) Water.
· Add 4 heaped kadkis of Besan and 3 heaped kadkis of Sooji.
· Mix all ingredients well to a smooth consistency.  Add water if necessary.  Add the juice of 1 lime to the mixture and mix.
· Add 4 teaspoons of oil to mixture.  Add 1 1/2 teaspoons of Eno Salt.
· Pour mixture into a pre heated greased steel thali.  And steam with a cover for 20 minutes.
· Remove from stove and cut up into smaller squares

Separately:
· Heat 5 tablespoons of oil and add mustard seeds. 
· When the mustard cracks add one glass of water to the oil and add 5 green chillies cut lengthwise. 
· Add 3 teaspoons of sugar and bring to a boil.

Finally:
· Sprinkle the liquid over the cooked dhokla.  Sprinkle some chopped coriander leaves.
Leave for 10 minutes.  Your dhokla is ready.
