Yorkshire Pudding

2 eggs
1/4 tsp salt
1 c milk
1 c flour
vegetable oil or beef fat

Sift flour and salt. Add milk gradually to form a smooth paste.
Add eggs and beat 2 minutes with a whisk or electric beater.
Cover the bottom of a muffin pan with vegetable oil or beef fat (drop a bit into each one).
Pour flour mixture into each, about half full.

Bake at 450 about 20 to 30 minutes, until they rise and get golden brown.
Great side dish for roast beef!
