1 c butter
1 c brown sugar
1 c peanut butter
1 c coconut
1 c chocolate chips
1 c nuts, chopped
1 tsp baking powder
1 tsp vanilla
1 c white sugar
3 eggs
1 c oatmeal
1 c raisins
1 c flour
1 tsp baking soda
1 tsp salt
Cream together butter and sugars, then add peanut butter. Mix well. Beat in eggs.
Measure out flour and add baking soda, baking powder and salt. Mix. Measure out all the other ingredients including vanilla and add to the flour mixture. Mix to coat raisins, nuts, etc. Add this mixture to the butter/sugar/eggs mixture. Mix well.
Drop by spoonfuls onto greased cookie sheet and bake in a 350 oven for 10 to 14 minutes.
These cookies spread quite a bit, so leave enough space between spoonfuls. Allow cookies to cool on cookie sheets for a few minutes before transferring to wire racks to cool.
Makes about 7 to 9 dozen cookies.
