1/2 c slivered almonds
3 Tb sugar
1/2 head iceberg lettuce
1/2 head romaine or leafy lettuce
1/2 sweet red onion, thinly sliced into
rings
1 - 11 oz can of mandarin oranges, drained
In a frying pan, heat 3 T sugar over medium-low heat until melted (sugar turns liquid). Sprinkle almonds into sugar and stir to coat; almonds will clump together. Pour onto a greased plate and let cool.
Tear lettuce into bite sized pieces. Toss with onion rings, oranges and cooled candied almonds. Cover with dressing below:
Dressing:
3 Tb orange juice
3 Tb vegetable or olive oil
2 Tb vinegar
1 Tb sugar or honey
1 to 2 tsp poppy seeds
1/4 tsp salt
Toss gently to coat and serve immediately.
Serves 6.
