Lemon Loaf

1 1/2 c flour
1 1/2 tsp baking powder
1/4 tsp salt
6 Tb shortening
1 c sugar
2 eggs, beaten well
1/2 c milk
grated rind of 1 lemon

Glaze:

1/3 c sugar
juice of 1 lemon
 
 

Sift together flour, baking powder and salt. Cream shortening and sugar. Add eggs, milk, sifted dry ingredients and lemon rind to creamed mixture.

Pour into a greased 9 x 5 x 3" pan. Bake at 350 for 1 hour. Remove from oven and glaze with 1/3 c sugar and the juice of one lemon.

Yield: one loaf.
