Caesar Salad

1 clove garlic
1 Tb olive oil
1 tsp lemon juice
1 tsp vinegar
3 drops tabasco sauce
1 tsp mustard (or more)
1 tsp worcestershire sauce
1/4 tsp salt
pepper
1 egg yolk
parmesan cheese
1/2 head romaine lettuce
4 slices crisp bacon
caesar croutons

In a wooden salad bowl, add oil and crushed garlic. Add egg yolk and mix. Add lemon juice, vinegar, tabasco, mustard, worcestershire, salt and pepper. Mix well.

Tear chilled romaine lettuce into bite sized pieces. Tear bacon into small pieces.

Add to the sauce, grated parmesan cheese until thick. Add lettuce and toss until well coated. Add bacon and croutons. Sprinkle more parmesan cheese over the top of the salad.

Serve on chilled salad plates with a wedge of lemon.
