1/2 head green cabbage
3 green onions
1 package Ichi Ban Chow Mein noodles *
1/2 c slivered almonds (blanched, not
salted)
1/2 c sunflower seeds (not salted)
1/2 c sesame seeds (not salted)
Break noodles apart into bite-sized pieces. Spread out on a baking sheet and add nuts and seeds. Toast in a 350 oven for 10 - 15 minutes. Keep watch, and stir once and awhile for even toasting. Slice and chop cabbage and green onions. Add noodles, seeds and nuts to cabbage and onions. Just before serving, add the dressing below:
Dressing:
1/2 c oil
5 Tb vinegar
1/4 c white sugar
1/2 tsp salt
seasoning pkg from the Ichi Ban noodles
Mix together and add to the mixture above. Enjoy right away. This salad does not keep, as the noodles get soggy if kept overnight.
* Ichi Ban Chow Mein noodles can be found
in the dry soup section at Safeway. They come in a small plastic bag and
include the seasoning used in the dressing. Be sure to get the regular
flavor, as it comes in many other flavors like mushroom, shrimp, etc. Get
the regular red - colored package.
