1/4 c butter
2 eggs, beaten
1+ 3/4 c flour
1/2 tsp baking soda
3/4 c white sugar
1 tsp cream of tartar
1/2 tsp salt
1 c crushed bananas (2 or 3 over-ripe)
1/4 c hot water
1/2 c chopped nuts (optional)
In a large bowl, cream butter and add sugar and beaten eggs. Beat well. Set aside.
In a smaller bowl, sift flour with cream of tartar and salt, then add chopped nuts, if desired. Set aside.
In a small bowl, add soda dissolved in hot water, to the banana pulp. Set aside.
Add dry mixture alternately with bananas
to the creamed mixture.
Pour into a loaf pan (with Teflon) and
bake in a moderate oven (350) for 40 to 50 minutes.
Let stand before cutting.
It's great sliced, toasted and topped with
peanut butter!
