Apple - Cranberry Crisp
 

1 1/2 c fresh cranberries
1/2 c water
1/4 c white sugar

8 medium apples, sliced thinly
1 Tb lemon juice
1/4 c brown sugar
1 Tb flour
1/4 tsp cinnamon

1/3 c flour
1 c rolled oats
1/2 c brown sugar, firmly packed
1 tsp cinnamon
1/3 c butter, melted

Preheat oven to 375. Wash fresh cranberries, removing any stems and bruised berries. Bring 1/2 c water and 1/4 c sugar to a boil and add berries. Cook just until berries pop and remove from heat.

Place apples and cranberries into a bowl and sprinkle with lemon juice.

Combine 1/3 c flour, oats, 1/2 c sugar, 1 tsp cinnamon and butter, mixing until crumbly. Sprinkle crumb mixture over apples and cranberries. Bake for about 30 minutes until browned and apples are tender.

Serve warm or cold, with cream or ice cream!
