Lazy day Pesto

I make a "real" pesto, and maybe one day I'll post that recipe too.  This one, however, is the perfect solution for a really quick meal that's tasty too.

1 package pasta (any kind you like)
Olive oil (garlic infused olive oil is great for this)
Pine nuts
Basil (several handfuls)
Garlic (optional)
Parmasiana Reggiano cheese (use regular Parmesan if you must, but don't let me see you)

Make your pasta.  Toast the pine nuts in a heavy-bottomed, dry pan - just heat them, tossing or stirring, until they're golden.  It only takes about 30 seconds.  If you're using fresh garlic, put in into the pan (after removing the nuts) with some olive oil and just heat it.  Again, about 30 seconds. 

When the pasta is cooked, drain it and put it into a dish.  Toss it with the oil, garlic, and pine nuts, then tear or cut as much basil as you like and toss that through.  Add cheese.  Eat.
